how to deal with illegal sized tyres fitted???

Im thinking about fitting new tyres to my GLX-R (07). I currently have the crap factory bridgestone 245/70/16 and want to get 265/75/16's which a lot of you have. but all the tyre fitters are telling me they won't fit them for insurance purpuses (in Brisbane). one place will fit them though.
Those of you that have them fitted, do you have any concerns about insurance?
my best legal choice is to go with 255/75/16 but will hardly make a differance as far as lift, 15mm i think.

Tell them that you need them fitted as you have booked in an engineer to inspect and sign off on them.
Or you could get an engineer to certify them.
